Sun Dried Tomato Basil Stuffed Chicken
Ingredients
  • 4 Boneless Chicken Thighs (bone-in works if available)
  • 1/2 cup wilted, and drained Spinach,
  • 1/4 cup Sun Dried Tomato, finely chopped
  • 1/2 cup Artichokes, chopped
  • 4 leaves Basil, sliced
  • 1/4 cup Feta Crumbles
  • 1/4 cup Cream Cheese, softened
  • Salt and Pepper to taste
  • 1/4 cup Olive Oil
  • 1/2 cup Chicken Broth
Directions
  1. Remove chicken from the fridge at least 20 minutes before cooking to let the chicken come up to temperature and take the chill off for even cooking.
  2. Preheat oven to 350 degrees.
  3. In a small bowl, combine spinach, artichokes, sun dried tomatoes, feta cheese, cream cheese, and basil. Gently spoon the filling under the skin of the chicken and pull the skin taught over the chicken securely. Season the skin of the chicken with salt and pepper.
  4. In an oven proof skillet (like cast iron or stainless steel), preheat olive oil in the pan over medium high heat on the stove. While the oil is heating, prepare chicken. Season all sides of the chicken thighs with seasoning.
  5. Place chicken, skin side down, into the pan in the oil. Cook chicken for several minutes until the chicken is dark golden brown and crispy - about 4 minutes. Using tongs, turn the chicken over and cook on the other side until dark golden brown.
  6. Pour the chicken stock into the bottom of the pan and carefully cover the pan with aluminum foil and place in the oven for 12-15 minutes until the internal temperature of the chicken reaches 160 degrees. Remove and let rest for 5 minutes before serving.
  7. Serve with roasted vegetables.

Happy Birthday Sis

Today is my sister's birthday. It's going to be a very special year for her as she is getting married this summer. I cannot wait to see what 2015 brings for her and so I thought I would show her some things that I thought she would love.

Anthropologie, Anapia Tank, $78
I like this top for work or play. And the detail on the back is a nice surprise.

Maybe something for a special day in August?

Nordstrom, Madewell Fieldwalk Jacket, $96 (looks like the price increased on this one, so here's another Madewell option for under $100!
My sister has the largest coat collection I've ever seen and one of her favorite shopping spots is Madewell. Perfect.

Confused? My sister works in a hospital and so fashion isn't always her first priority. She is also one heck of a do gooder; so when I found this company I had to post it. FIGS donates a pair of scrubs to a healthcare worker in a developing country every time you purchase a pair from them. Genius.

Happy birthday Sara!

Cuff 'Em

Hey there lovebugs,
Are you ever overwhelmed by the 'arm party'? The combination of bracelets, bangles, colors, styles, stones, plus a full outfit? It can be a lot. That is why I am a big fan of a statement cuff. Not just a simple metal cuff bracelet, but something with extra dimension, some stones and color that give the bracelet a kick in the pants. You know, if bracelets wore pants.

J Crew Factory, Stone Cuff Bracelet, $19
See? This bracelet is intricate yet simple. Gatsby-inspired yet modern. And the price.

This starburst pattern is great for any season or climate. The blend of stones is a bit Aztec but the bangle itself is quite modern.

Sole Society, Stone Statement Cuff, $17
These colors. Oh I just love them. Not too girly, but certainly warm and inviting.

And speaking of girly. These pink statement stones are perfectly balances with the hammered metal.

So leave the bracelet stacking at home once and a while and try a simple statement cuff. It keeps things simple yet stylish.

Crossbody Do It All

We haven't looked at purses in quite some time. I think we're overdue for a utility bag. Something that isn't for a night on the town, but that's why you love it. It's your do it all day long bag. It's sturdy, stylish, and easy to throw on and go. It's your cross body satchel.

Last Call Neiman Marcus, Dotted Turn Lock Satchel, $37
This bag is on super sale only until the 11th so grab it while you can!

Sole Society, Baylen, $49
I like this understated bag because it's classic. You could also add some personality to it by tying a silk scarf around the top handle.

Target, Mini Satchel Handbag, $29
I love mint for spring and by having this in my closet, I think spring make come quicker.

The rounded edges of this bag give it a nice feminine touch, but the contrasting edging gives it some pop.

Grabbing my go to bag for daytime can take many forms, but these cross body options are easy and beautiful for any occasion.
