Friday Foodday

Happy Friday lovebugs, I'm so ready for it. These recipes are special for Cinco de Mayo!


Spice Rubbed Shrimp with Spaghetti Salsa Verde

Ingredients
1 pound spaghetti or angel hair pasta
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon sea salt
1/2 teaspoon coarse grind black pepper
1 pound large shrimp, peeled and deveined
4 tablespoons extra virgin olive oil, divided
1 finely chopped white onion
1 tablespoon minced garlic
1 cup salsa verde
1 14.5-ounce can petite diced tomatoes
1/2 cup sour cream



Directions
1- Cook pasta according to package directions and drain. Set aside.
2- Place chili powder, smoked paprika, cumin, garlic powder, salt and pepper into a small bowl, stirring to combine. 

3- Pat the shrimp dry, then place in the spices and rub into both sides. 
4- Heat 2 tablespoons oil in a large, oven-safe pot over medium heat. Add shrimp and cook until pink on both sides, about 3-4 minutes each side. 
5- Remove from pan and cover with foil until ready to serve.
6- In the now-empty skillet, heat 2 tablespoons oil over medium heat. Add onions and garlic, cooking and stirring until tender, about 5 minutes. Add salsa, tomatoes, and sour cream, stirring to combine. Just before serving add cooled pasta to the sauce and stir to combine. Top with the shrimp.



Guacamole

Ingredients

2 ripe Haas avocados
1 lime, juiced
1 garlic clove, finely minced 
salt
pepper
1 small roma tomato, diced
2 tablespoons cilantro, chopped

Directions
Open ripe avocados, remove the seed and scoop out the flesh into a large bowl. Squeeze lime juice over avocados and mash slightly. Stir in remaining ingredients and serve! I find it is best when you let the guacamole sit in the fridge 20-30 minutes to let the garlic work its magic.


Skinnygirl Margarita

Ingredients

  • 2 oz of Clear Premium Tequila
  • .5 oz Orange Liquor
  • Juice of 1 Fresh Lime
  • Ice
DirectionsCombine all ingredients over a glass of ice and garnish with a lime wedge.

Fly Away With Me

Graphic prints are huge this season, and I'm loving the animal graphic print because it's unique and fun for the warmer months. Today we're looking at birds. Bird prints and bird patterns.

Sheer Shirt

Lovebugs, How are you feeling about sheer these days? Are you avoiding it or willing to give it a try. I think with the correct fit and the appropriate under shirt, it's a great style to add a little sexy to your wardrobe.

I'm loving this shirt. It comes in three other punchy colors. The collar, sleeve and length is just perfect.

This fun print is perfect for a mini skirt, or under a suit. Yes, ladies a suit. Wear the appropriate camp and add a longer necklace and you got an outfit.

I love this thick gingham print, this is great for vacation.

Hello sweet peter pan collar and great green color! How perfect would this be with skinny jeans or white eyelet shorts?

So fear not, lovebugs, when I saw sheer I don't mean Gaga sheer, I mean lady like sheer, a little dangerous but mostly just downright hot sheer.

Short Sleeve Jacket

As the weather gets a little warmer, we don't need our usual jackets. But sometimes when the sun does go down and you're walking home from work or heading out on a Friday night, you need a little something extra. I'm really loving short sleeved jackets for this type of occasion. They're casual and easy to throw on and go.

A great, rich brown makes this jacket perfect for almost any outfit. I love the gathered sleeve as well.

The military style jacket is something unique. Add the great mandarin collar finishes the look.

This beautiful silk jacket actually has a pin point dot print that makes it much more feminine. Not to mention those magenta pants are incredible.

How fantastic is mix of lace and biker? So perfect for Spring.

I prefer a short sleeve jacket in the warmer weather but something like the Nordstrom jacket could be layered in the cooler months.
