Tex Mex Chicken Pot Pie
c/o Dad
Ingredients
8 cups Chicken Stock (see related recipe)
1 cup + 3 Tbsp Bob's Red Mill Organic Medium Grind Cornmeal, divided
2 green onions, chopped finely, divided
4 Tbsp Chipotle Lime Finishing Butter
1 pkg (16 oz) Tex Mex Blend
1/4 cup Food You Feel Good About Fire-Roasted Poblano Peppers
3 1/2 cups cooked chicken from Chicken Stock, shredded
1 pkg (8 oz) Shredded Sharp Cheddar
Directions
Preheat oven to 350 degrees.
1. Add stock to stockpot; bring to rolling boil on MEDIUM-HIGH. Cook 1 hour on low boil, until stock is reduced by half (4 cups total). Reserve 1 cup.
2. Add 3 cups of hot stock to large saucepan on MEDIUM-HIGH heat. Slowly add 1 cup cornmeal, stirring constantly, bringing to a low boil. Cook and stir about 5 min, until mixture is smooth and thickened.
3. Fold half the chopped green onions into cornmeal. Remove from heat; let stand while preparing remainder of recipe.
4. Place chipotle finishing butter in an oven-ready skillet; heat on MEDIUM. Stir in 3 Tbsp cornmeal until mixture is bubbling. Raise heat to MEDIUM-HIGH. Cook, stirring constantly, 1 min; watch carefully to prevent scorching.
5. Add Tex Mex blend, peppers, and reserved cup of stock to skillet; stir to combine. Bring to a simmer, 4 min, or until sauce thickens.
6. Turn off heat. Fold chicken and remaining green onions into mixture until well-mixed. Smooth surface evenly.
7. Fold shredded cheddar into cornmeal/onion mixture and spread over Tex-Mex mixture, smoothing over surface, as if frosting a cake.
8. Transfer skillet to oven. Bake 30-35 min, until golden brown on top and edges bubble. Rest 10-15 min for easy scooping.

Stylish Blogger Award
Well thanks so much Lindsay at YAMS Designs for giving me and nine other bloggers this award. I'd like to thank my parents, my dog, everyone that voted for me-- kidding. But this is a fun way for me to tell you 7 things about myself that you probably don't know, and then I pass it along to some of my stylish blog friends too!
1. I'm not spontaneous. At all. I love planning.
2.I'm terrified of fish. I won't go in the ocean without stomping around in the water first to scare the fish away.
3. I love sequins. On my nails, on my shoes, you name it.
4. I watch All My Children. Daily.
5. I carry a white ribbon in my purse or coat all of the time in case I put my hair in a ponytail. Hair just looks better up with a ribbon in it.
6. I rode horses competitively for 18 years.
7. I have a weird crush on Mike Rowe from "Dirty Jobs" on Discovery Channel.
Now I get to pass it on to some of my very stylish friends:
1. Cup of Jo
6. Wit & Whimsy
10. Nikki Rappaport
Trouser Jeans
Today's post was a reader request from the lovely SJ and she would like some ideas for trouser jeans. Well let's first talk about what a trouser jean is and what makes it so different than a normal pair.
A trouser jean is classified as just that for a reason. It's a trouser. That means it should have a wider waistband that should sit higher than a normal jean. No low riders allowed here. In addition the leg should be straight on the upper thighs without pulling that the midsection- these jeans do not need to fit like a glove, they show off your length not your waist size. The pant should not taper at all down the leg, but if anything flare out just a touch at the ankle. Also try to avoid back pockets, it makes the look so much more casual than it needs to be.
You guys, I have gotten no recipes for Friday Foodday. I know you all cook. I know it's good stuff. Send it in to me so we can all enjoy it!

Banana Republic, Trouser dark wash, $49.99
Pretty much exactly what you want to be looking for. Note the length comes to the top of the heel not the bottom.
Loft, Dark rinse modern trouser, $49 with code EXCLUSIVE
This jean has a larger sewn hem so it almost looks like a cuff. And an amazing price.
Old Navy, Flirt wide leg trouser, $39.50
These jeans are fantastic because they're black! Black denim is very hot right now.
Nordstrom, KUT Flare leg denim trouser, $49.90
Not only do these have a little more flare at the leg but they also have a little spandex in the material so they're super comfy.
That's my take for a good trouser jean. Perfect for a nicer dinner date or casual Friday at work. Just remember they're not going to fit like your Gap skinny jeans.
